15 Ground Beef Dinners the Whole Family Loves
Fifteen family friendly ground beef dinners, from sloppy joes and tacos to meatloaf, stuffed peppers and cozy casseroles that kids and grownups both love.

A pound of ground beef in the fridge means dinner is basically solved at my house. It is affordable, quick to cook and loved by every member of my family, from the toddler to the grandparents. This list covers fifteen favorites, including skillet suppers, Mexican night staples, comfort casseroles, burgers and even a hearty soup. My best planning tip is to brown three or four pounds at once with onion, cool it, and freeze it flat in quart bags so half the work is done on busy nights.
1) Classic Sloppy Joes

1) Classic Sloppy Joes
Homemade sloppy joes have a tangy sweet sauce that tastes so much fresher than the canned kind. Finely diced onion and green pepper melt into the beef and add flavor without big chunks picky kids notice. Simmering uncovered thickens the sauce so it stays on the bun instead of dripping down your arm.
Ingredients
- 1 1/2 lbs lean ground beef
- 1 small yellow onion, finely diced
- 1/2 green bell pepper, finely diced
- 2 cloves garlic, minced
- 1 cup ketchup
- 1/4 cup water
- 2 tablespoons brown sugar
- 1 tablespoon yellow mustard
- 1 tablespoon Worcestershire sauce
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 6 hamburger buns, toasted
Instructions
- Set a large 12 inch skillet over medium high heat. Add the ground beef, onion and bell pepper and cook for 7 to 8 minutes, breaking up the meat with a wooden spoon, until no pink remains and the beef reaches 160F.
- Drain off any excess fat, leaving the meat and vegetables in the pan.
- Stir in the garlic and cook for 1 minute until fragrant.
- Add the ketchup, water, brown sugar, mustard, Worcestershire sauce, chili powder, salt and pepper. Stir until everything is evenly combined.
- Bring the mixture to a simmer, then reduce the heat to medium low. Cook uncovered for 10 to 15 minutes, stirring occasionally, until the sauce thickens and clings to the meat.
- Taste and adjust the seasoning, adding a little more brown sugar for sweeter joes or a pinch more chili powder for extra kick.
- Toast the buns under the broiler for 1 to 2 minutes, then pile the meat mixture generously onto the bottom halves and add the tops. Serve with pickles and chips.
Sloppy joes are pure childhood nostalgia for me, and now my own kids beg for them. They are messy in the best way and ready in half an hour.
The filling freezes perfectly for up to 3 months, so I often make a double batch. Spoon leftovers over baked potatoes or tater tots for a fun second night dinner.
2) Easy Beef Tacos

2) Easy Beef Tacos
This homemade taco seasoning uses pantry spices you already own and tastes brighter than any packet. A little tomato sauce simmered with the beef keeps the filling juicy and helps the spices cling. Crunchy shells, cool lettuce and melty cheddar make it the ultimate build your own family dinner.
Ingredients
- 1 lb ground beef
- 1/2 small onion, finely diced
- 1 tablespoon chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 3/4 teaspoon salt
- 1/2 cup tomato sauce
- 1/4 cup water
- 8 taco shells or small tortillas
- 1 cup shredded cheddar cheese
- 2 cups shredded lettuce
- 1 cup diced tomatoes
Instructions
- Heat a large skillet over medium high heat. Add the ground beef and onion and cook for 6 to 8 minutes, breaking the beef into small crumbles, until browned and cooked to 160F.
- Drain the excess fat and return the skillet to the heat.
- Sprinkle in the chili powder, cumin, paprika, garlic powder, oregano and salt. Stir for 1 minute so the spices toast and coat the meat.
- Pour in the tomato sauce and water. Simmer for 5 to 7 minutes, stirring now and then, until the liquid reduces and the meat is saucy but not wet.
- While the meat simmers, warm the taco shells on a baking sheet in a 350F oven for 5 minutes, or heat soft tortillas in a dry skillet.
- Set out the cheese, lettuce, tomatoes and any other favorite toppings like sour cream, salsa or sliced jalapenos.
- Spoon the seasoned beef into the shells and let everyone build their own tacos at the table.
Taco Tuesday is a sacred tradition at our house and this is the recipe behind it. Mixing my own seasoning means I can make it mild for the kids and spicy on my plate.
Stir together a big jar of the spice blend so you can grab 2 tablespoons per pound any time. Leftover taco meat is great in quesadillas, nachos or a quick taco salad.
3) Homemade Cheeseburger Macaroni

3) Homemade Cheeseburger Macaroni
This from scratch version of the boxed dinner cooks the macaroni right in the beef broth and milk, so the starch makes the sauce creamy. Sharp cheddar melts in at the end for real cheeseburger flavor. A spoonful of mustard and some tomato paste add that familiar burger tang without any powdered cheese.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 2 1/2 cups beef broth
- 1 1/2 cups whole milk
- 2 cups elbow macaroni, uncooked
- 2 cups shredded sharp cheddar cheese
- 1 teaspoon yellow mustard
Instructions
- In a large deep skillet or Dutch oven, cook the ground beef and onion over medium high heat for 6 to 8 minutes, breaking up the meat, until browned and it reaches 160F. Drain the fat.
- Add the garlic, paprika, salt, pepper and tomato paste. Stir for 1 minute until the tomato paste darkens slightly.
- Pour in the beef broth and milk and bring to a gentle boil, stirring to scrape up any browned bits.
- Stir in the uncooked macaroni. Reduce the heat to medium low, cover, and simmer for 10 to 12 minutes, stirring every few minutes so the pasta does not stick, until the macaroni is tender and most of the liquid is absorbed.
- Remove the pan from the heat. Stir in the mustard, then add the cheddar a handful at a time, stirring until melted and creamy.
- Let it stand for 2 to 3 minutes to thicken, then serve with a side of green beans or a simple salad.
My kids grew up on the boxed version, but this homemade one won them over on the first try. It still cooks in one pan and takes about the same amount of time.
Stir in a handful of diced pickles at the end if your family loves a classic burger flavor. Add a splash of milk when reheating leftovers to bring back the creamy sauce.
4) Classic Meatloaf

4) Classic Meatloaf
This tender meatloaf gets its soft texture from breadcrumbs soaked in milk before they meet the beef. Worcestershire, thyme and onion season it deeply from the inside out. A sweet and tangy ketchup glaze goes on in two layers so it bakes into a sticky caramelized coating.
Ingredients
- 2 lbs ground beef, 85 percent lean
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 3/4 cup plain breadcrumbs
- 2/3 cup whole milk
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- For the glaze
- 3/4 cup ketchup
- 3 tablespoons brown sugar
- 1 tablespoon apple cider vinegar
Instructions
- Preheat the oven to 350F. Line a rimmed baking sheet with foil or lightly grease a 9×5 inch loaf pan.
- In a large bowl, stir together the breadcrumbs and milk and let them soak for 5 minutes until soft.
- Add the eggs, onion, garlic, Worcestershire sauce, thyme, salt and pepper to the soaked breadcrumbs and mix well.
- Add the ground beef and mix gently with your hands just until combined. Overmixing makes meatloaf dense.
- Shape the mixture into a 9 by 5 inch loaf on the baking sheet, or press it into the loaf pan.
- Whisk together the ketchup, brown sugar and vinegar. Spread half of the glaze over the top of the meatloaf.
- Bake for 45 minutes, then spread on the remaining glaze. Bake another 15 to 20 minutes until the center reaches 160F.
- Let the meatloaf rest for 10 minutes before slicing so it holds together nicely, then serve thick slices with mashed potatoes.
Meatloaf with mashed potatoes is the Sunday dinner I grew up on, and it still feels like a hug on a plate. The leftovers might be my favorite part.
Shape the loaf in the morning, cover, and refrigerate until it is time to bake, adding about 10 minutes to the cook time. Cold meatloaf sandwiches with a little extra ketchup make the best lunch.
5) Swedish Meatballs

5) Swedish Meatballs
Tender meatballs get a subtle warmth from allspice and nutmeg, which is what gives them that classic Swedish flavor. They simmer in a velvety cream gravy made right in the skillet with all the browned bits. Grated onion melts into the meat so the meatballs stay soft and juicy.
Ingredients
- 1 1/2 lbs ground beef
- 1/2 cup plain breadcrumbs
- 1/4 cup whole milk
- 1 large egg
- 1/4 cup finely grated onion
- 1/4 teaspoon ground allspice
- 1/4 teaspoon ground nutmeg
- 1 teaspoon salt
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 tablespoons all purpose flour
- 2 cups beef broth
- 1/2 cup heavy cream
- 1 tablespoon Worcestershire sauce
Instructions
- In a large bowl, combine the breadcrumbs and milk and let soak for 5 minutes. Add the egg, grated onion, allspice, nutmeg and salt, then add the ground beef and mix gently.
- Roll the mixture into 1 1/2 inch meatballs, making about 30.
- Heat the olive oil in a large 12 inch skillet over medium heat. Brown the meatballs in batches for 6 to 8 minutes, turning often, until browned on all sides. Move them to a plate.
- Melt the butter in the same skillet. Whisk in the flour and cook for 1 to 2 minutes until golden.
- Slowly whisk in the beef broth until smooth, then stir in the cream and Worcestershire sauce. Simmer for 3 to 4 minutes until thickened.
- Return the meatballs to the skillet, cover, and simmer on low for 8 to 10 minutes, until the meatballs reach 160F in the center.
- Taste the gravy and season with salt and pepper. Serve over buttered egg noodles or mashed potatoes.
My kids think these are a special treat because they remind them of a certain big furniture store cafeteria. I love that homemade tastes even better.
Freeze browned meatballs on a sheet pan, then bag them so you can make gravy and dinner in 20 minutes later. A spoonful of lingonberry or cranberry jam on the side is a lovely traditional touch.
6) Shepherd’s Pie

6) Shepherd’s Pie
A savory beef and vegetable filling simmers in a rich gravy flavored with tomato paste, Worcestershire and thyme. Creamy mashed potatoes get spread on top and roughed up with a fork so the peaks turn crispy and golden. Technically made with beef it is a cottage pie, but most American families call it shepherd’s pie.
Ingredients
- 2 1/2 lbs russet potatoes, peeled and cubed
- 4 tablespoons unsalted butter
- 1/2 cup whole milk
- 1 1/2 teaspoons salt, divided
- 1 1/2 lbs ground beef
- 1 yellow onion, diced
- 2 carrots, diced
- 2 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons all purpose flour
- 1 cup beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 cup frozen peas
Instructions
- Boil the potatoes in salted water for 15 minutes until fork tender. Drain and mash with the butter, milk and 1 teaspoon of salt until smooth.
- Preheat the oven to 400F.
- In a large oven safe skillet over medium high heat, cook the beef, onion and carrots for 8 to 10 minutes, breaking up the meat, until browned and it reaches 160F. Drain excess fat.
- Stir in the garlic, tomato paste and flour and cook for 1 minute.
- Add the broth, Worcestershire sauce, thyme and remaining salt. Simmer for 5 minutes until thick and saucy, then stir in the peas.
- Spread the mashed potatoes over the filling, sealing the edges. Rough up the top with a fork so it browns.
- Bake for 20 to 25 minutes, until the filling bubbles at the edges and the potatoes are golden. Broil for 2 minutes for extra color if you like, then rest 10 minutes before serving.
This is the meal I make when the weather turns cold and everybody needs something cozy. Making it in one oven safe skillet keeps dishes to a minimum.
Leftover mashed potatoes work perfectly here and cut the prep time in half. Assemble the whole pie a day ahead, refrigerate, and bake for 35 to 40 minutes straight from the fridge.

7) Korean Beef Bowls

7) Korean Beef Bowls
This quick beef dish borrows the sweet and savory flavors of Korean bulgogi using affordable ground beef. Brown sugar, soy sauce, ginger and sesame oil cook down into a glossy sauce that coats every crumble. Served over fluffy rice with crisp cucumber, it is a complete meal in about 25 minutes.
Ingredients
- 1 lb lean ground beef
- 1 tablespoon vegetable oil
- 4 cloves garlic, minced
- 1 tablespoon grated fresh ginger
- 1/3 cup low sodium soy sauce
- 1/4 cup packed brown sugar
- 1 tablespoon toasted sesame oil
- 1 tablespoon rice vinegar
- 1/4 teaspoon red pepper flakes
- 4 cups cooked white rice
- 3 green onions, sliced
- 1 teaspoon sesame seeds
- 1 cucumber, thinly sliced
Instructions
- In a small bowl, whisk together the soy sauce, brown sugar, sesame oil, rice vinegar and red pepper flakes until the sugar dissolves.
- Heat the vegetable oil in a large skillet over medium high heat. Add the garlic and ginger and cook for 30 seconds until fragrant.
- Add the ground beef and cook for 6 to 8 minutes, breaking it into small crumbles, until browned and it reaches 160F. Drain any excess fat.
- Pour the sauce over the beef and stir well. Simmer for 2 to 3 minutes until the sauce reduces and the beef looks glossy and slightly sticky.
- Stir in half of the green onions and remove the skillet from the heat.
- Divide the rice among 4 bowls and spoon the beef over the top.
- Garnish with the remaining green onions, sesame seeds and sliced cucumber. Add a fried egg or steamed broccoli if you want to stretch the meal further.
This recipe has been in our weekly rotation for years because it is fast, cheap and wildly popular with the kids. I always double it for lunches.
Cook the rice ahead or use frozen microwavable rice to make this even quicker. Leftovers reheat beautifully and also taste great wrapped in lettuce leaves.
8) Stuffed Bell Peppers

8) Stuffed Bell Peppers
Sweet bell peppers bake until tender and are stuffed with a hearty filling of seasoned beef, rice and tomatoes. A layer of mozzarella melts into the filling and then gets bubbly and golden on top. Baking covered first steams the peppers so they soften all the way through.
Ingredients
- 6 large bell peppers, any color
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 1/2 cups cooked white rice
- 1 can (14.5 oz) diced tomatoes, drained
- 1 can (8 oz) tomato sauce, divided
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 1/2 cups shredded mozzarella cheese, divided
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven to 375F. Cut the tops off the peppers and remove the seeds and ribs. Stand them upright in a 9×13 inch baking dish, trimming the bottoms slightly if they wobble.
- In a large skillet over medium high heat, cook the beef and onion for 7 to 8 minutes until browned and the beef reaches 160F. Drain the fat and stir in the garlic for 1 minute.
- Remove the skillet from the heat and stir in the rice, diced tomatoes, half the tomato sauce, Italian seasoning, salt, pepper and 1 cup of the mozzarella.
- Spoon the filling into the peppers, packing it gently and mounding it on top.
- Pour the remaining tomato sauce over the peppers and add 1/4 cup of water to the bottom of the dish. Cover tightly with foil.
- Bake covered for 30 minutes. Uncover, sprinkle the remaining cheese on top, and bake 10 to 15 minutes more until the peppers are tender and the cheese is bubbly.
- Sprinkle with parsley and let cool for 5 minutes before serving.
Stuffed peppers look impressive on the table, but they are really just a smart way to turn a pound of beef into six generous servings. Each person gets their own little edible bowl.
Use a mix of red, yellow and orange peppers since they are sweeter than green. Stuffed peppers freeze well before baking, so wrap them individually and bake from frozen for about 1 hour.
9) Beef Enchiladas

9) Beef Enchiladas
Tortillas get rolled around a filling of seasoned beef, pinto beans, green chiles and cheese, then baked in red enchilada sauce. The edges turn slightly crisp while the centers stay soft and saucy. A heavy blanket of melted cheese on top makes this a guaranteed family favorite.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- 1 can (15 oz) pinto beans, rinsed and drained
- 1 can (4 oz) diced green chiles
- 2 cans (10 oz each) red enchilada sauce
- 10 small flour tortillas
- 3 cups shredded Mexican blend cheese, divided
- Sliced green onions and sour cream, for serving
Instructions
- Preheat the oven to 350F and spread 1/2 cup of enchilada sauce over the bottom of a 9×13 inch baking dish.
- In a large skillet over medium high heat, cook the beef and onion for 7 to 8 minutes until browned and the beef reaches 160F. Drain the fat.
- Stir in the garlic, cumin and chili powder and cook for 1 minute. Add the salt, pinto beans, green chiles and 1/2 cup of enchilada sauce and simmer for 3 minutes.
- Warm the tortillas in the microwave for 30 seconds so they roll without cracking.
- Spoon about 1/3 cup of the beef filling and a small handful of cheese down the center of each tortilla. Roll up tightly and place seam side down in the baking dish.
- Pour the remaining enchilada sauce evenly over the top and sprinkle with the remaining cheese.
- Bake uncovered for 20 to 25 minutes, until the sauce is bubbling and the cheese is melted. Rest 5 minutes, then top with green onions and sour cream.
Enchiladas are my go to when I need to feed a crowd or bring a meal to a friend. They stretch one pound of beef into a full pan of dinner.
Assemble the enchiladas without the top sauce and cheese, cover, and refrigerate up to a day ahead. Add the sauce and cheese right before baking and give them an extra 10 minutes.
10) Ground Beef Stroganoff

10) Ground Beef Stroganoff
This budget friendly twist on classic beef stroganoff uses ground beef and browned mushrooms in a rich savory gravy. Sour cream stirred in at the end makes the sauce tangy and creamy. Spooned over buttery egg noodles, it is cozy comfort food that cooks in about 30 minutes.
Ingredients
- 12 oz wide egg noodles
- 1 lb ground beef
- 1 small onion, diced
- 8 oz white mushrooms, sliced
- 2 cloves garlic, minced
- 2 tablespoons unsalted butter
- 2 tablespoons all purpose flour
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3/4 cup sour cream
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the egg noodles in a large pot of salted boiling water according to package directions. Drain and toss with a small pat of butter.
- Meanwhile, in a large skillet over medium high heat, cook the beef and onion for 6 to 8 minutes until browned and the beef reaches 160F. Drain the fat and move the beef to a plate.
- Melt the butter in the same skillet and add the mushrooms. Cook for 5 minutes until golden, then stir in the garlic for 30 seconds.
- Sprinkle the flour over the mushrooms and stir for 1 minute.
- Slowly pour in the beef broth while stirring, then add the Worcestershire sauce, salt and pepper. Return the beef to the skillet and simmer for 5 minutes until the sauce thickens.
- Turn the heat to low and stir in the sour cream until smooth. Do not let it boil or the sour cream may separate.
- Serve the stroganoff over the buttered noodles and sprinkle with parsley.
I love the flavor of traditional stroganoff, but ground beef makes it affordable and much faster. My kids happily eat the mushrooms when they are hiding in that creamy sauce.
Let the sour cream sit out while you cook so it is not ice cold, which helps it blend smoothly. Plain Greek yogurt works in a pinch if you are out of sour cream.
11) Smash Burgers

11) Smash Burgers
Smashing balls of cold beef onto a screaming hot skillet creates thin patties with wide crispy lacy edges. Thinly sliced onions get pressed right into the meat so they caramelize as it cooks. Two patties stacked with melty cheese and a tangy homemade sauce taste just like a favorite burger joint.
Ingredients
- 1 1/2 lbs ground beef, 80 percent lean
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 small yellow onion, very thinly sliced
- 8 slices American cheese
- 4 potato buns
- 2 tablespoons unsalted butter, softened
- 1/4 cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon dill pickle relish
- Dill pickle chips, for serving
Instructions
- Stir together the mayonnaise, ketchup and relish to make a quick burger sauce. Butter the cut sides of the buns.
- Divide the beef into 8 loosely packed balls of about 3 oz each. Keep them cold until you are ready to cook.
- Heat a large cast iron skillet or griddle over medium high heat. Toast the buns cut side down for 1 minute until golden, then set aside.
- Place 2 or 3 beef balls in the skillet, spaced apart. Top each with a few onion slices, cover with a square of parchment, and smash firmly with a sturdy spatula into a thin patty.
- Season with salt, pepper and garlic powder. Cook for 2 to 3 minutes until the edges are deeply browned and crispy.
- Scrape under each patty with the spatula and flip. Add a slice of cheese and cook 1 minute more until the beef reaches 160F and the cheese melts.
- Stack two patties on each bun with sauce and pickles and serve right away.
Smash burgers changed how we do burger night because they cook in minutes and need no grill. The crispy edges are the best part.
Use 80 percent lean beef because the fat is what makes the edges crisp. Work in small batches so the skillet stays hot and each patty gets that golden crust.
12) Salisbury Steak

12) Salisbury Steak
Seasoned beef patties are seared for a flavorful crust and then simmered in a rich onion and mushroom gravy. The gravy is made right in the same skillet so it picks up every bit of browned flavor. It is the grown up version of the frozen dinner classic, and it tastes miles better.
Ingredients
- 1 1/2 lbs ground beef
- 1/3 cup plain breadcrumbs
- 1 large egg
- 2 tablespoons ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon vegetable oil
- 2 tablespoons unsalted butter
- 1 yellow onion, thinly sliced
- 8 oz mushrooms, sliced
- 2 tablespoons all purpose flour
- 2 cups beef broth
- 1 tablespoon chopped fresh parsley
Instructions
- In a large bowl, mix the ground beef, breadcrumbs, egg, ketchup, Worcestershire sauce, salt and pepper until just combined. Shape into 4 oval patties about 3/4 inch thick.
- Heat the oil in a large 12 inch skillet over medium high heat. Brown the patties for 3 to 4 minutes per side until a dark crust forms. Move them to a plate. They will finish cooking in the gravy.
- Melt the butter in the same skillet over medium heat. Add the onion and mushrooms and cook for 6 to 7 minutes until soft and golden.
- Sprinkle in the flour and stir for 1 minute.
- Slowly whisk in the beef broth, scraping up the browned bits. Simmer for 2 to 3 minutes until the gravy begins to thicken.
- Return the patties to the skillet, spoon gravy over them, cover, and simmer on low for 10 to 12 minutes until the centers reach 160F.
- Sprinkle with parsley and serve with mashed potatoes and green beans.
My dad loved the TV dinner version, so making this from scratch for him always earns a big smile. It feels like a diner meal at home.
Shape the patties a day ahead and keep them covered in the fridge to make dinner quicker. Leftovers reheat wonderfully because the gravy keeps the beef moist.
13) Hamburger Soup

13) Hamburger Soup
This hearty soup is loaded with ground beef, potatoes, carrots, celery and green beans in a savory tomato broth. Worcestershire sauce and dried herbs make it taste like it simmered all day. It is thick enough to be a full meal and uses everyday vegetables you probably have right now.
Ingredients
- 1 1/2 lbs ground beef
- 1 yellow onion, diced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cloves garlic, minced
- 2 medium russet potatoes, peeled and diced
- 1 can (28 oz) crushed tomatoes
- 6 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 1/2 teaspoons salt
- 1/2 teaspoon black pepper
- 1 cup frozen green beans
Instructions
- In a large Dutch oven over medium high heat, cook the ground beef and onion for 7 to 8 minutes, breaking up the meat, until browned and the beef reaches 160F. Drain the excess fat.
- Add the carrots and celery and cook for 4 to 5 minutes, stirring occasionally, until they begin to soften. Stir in the garlic for 1 minute.
- Add the potatoes, crushed tomatoes, beef broth, Worcestershire sauce, thyme, basil, salt and pepper. Stir well.
- Bring the soup to a boil, then reduce the heat to medium low. Cover and simmer for 18 to 20 minutes, until the potatoes and carrots are fork tender.
- Stir in the frozen green beans and simmer uncovered for 5 more minutes until they are heated through.
- Taste and adjust the seasoning with more salt and pepper as needed.
- Ladle into bowls and serve with crusty bread, saltine crackers or grilled cheese sandwiches.
Hamburger soup is the meal my grandmother made whenever the pantry was looking bare. It feeds a crowd on a small budget and warms everyone up.
Make a big pot on Sunday and you have lunches for days, since it keeps 4 days in the fridge. It freezes well for 3 months, though potatoes soften a little after thawing.
14) Baked Ziti

14) Baked Ziti
Baked ziti layers tube pasta tossed in a meaty tomato sauce with pockets of creamy ricotta and plenty of melted mozzarella. Undercooking the pasta slightly keeps it from turning mushy in the oven. It has all the flavor of lasagna with far less work, since there are no noodles to layer.
Ingredients
- 1 lb ziti pasta
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 jar (24 oz) marinara sauce
- 1 can (15 oz) crushed tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 15 oz ricotta cheese
- 1 large egg
- 1/2 cup grated Parmesan cheese
- 3 cups shredded mozzarella cheese, divided
- 2 tablespoons chopped fresh basil
Instructions
- Preheat the oven to 375F and grease a 9×13 inch baking dish. Cook the ziti in salted boiling water for 2 minutes less than the package directions. Drain.
- In a large skillet over medium high heat, cook the beef and onion for 7 to 8 minutes until browned and the beef reaches 160F. Drain the fat and stir in the garlic.
- Add the marinara, crushed tomatoes, Italian seasoning and salt. Simmer for 5 minutes.
- In a bowl, stir together the ricotta, egg, Parmesan and 1 cup of the mozzarella.
- Toss the drained pasta with the meat sauce. Spread half of the pasta in the baking dish, dollop the ricotta mixture over it, then add the remaining pasta.
- Sprinkle the remaining 2 cups of mozzarella over the top. Cover with foil and bake for 20 minutes.
- Uncover and bake 10 to 15 minutes more, until the cheese is bubbly and golden in spots. Rest 10 minutes, then sprinkle with basil and serve.
Baked ziti is my favorite meal to bring to new parents or a neighbor who needs a hand. It travels well and makes a huge pan.
Assemble it up to 2 days ahead, cover, and refrigerate, then bake covered for 35 minutes and uncovered for 15. Unbaked ziti also freezes for 3 months if you wrap it tightly.
15) Tater Tot Casserole

15) Tater Tot Casserole
This Midwestern hot dish layers creamy beef and vegetables under rows of golden crispy tater tots. Cheddar melts both inside the filling and over the top for a cheesy crunch in every bite. Frozen vegetables and tots keep prep to about fifteen minutes, so it is a dream on busy evenings.
Ingredients
- 1 1/2 lbs ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 cans (10.5 oz each) condensed cream of mushroom soup
- 1/2 cup sour cream
- 2 cups frozen mixed vegetables, thawed
- 2 cups shredded cheddar cheese, divided
- 1 bag (32 oz) frozen tater tots
Instructions
- Preheat the oven to 375F and lightly grease a 9×13 inch baking dish.
- In a large skillet over medium high heat, cook the beef and onion for 7 to 8 minutes, breaking it into crumbles, until browned and the beef reaches 160F. Drain the fat.
- Stir in the garlic, salt, pepper and Worcestershire sauce and cook for 1 minute.
- Remove the skillet from the heat and stir in the cream of mushroom soup, sour cream and mixed vegetables until evenly combined.
- Spread the beef mixture in the baking dish and sprinkle 1 cup of the cheddar over the top.
- Arrange the frozen tater tots in tight even rows over the cheese, covering the entire surface.
- Bake uncovered for 30 minutes, then sprinkle the remaining cheese over the tots. Bake another 5 to 10 minutes until the tots are golden and crisp and the filling bubbles at the edges. Let stand 5 minutes before serving.
Every kid I know lights up when tater tot casserole hits the table. It is unapologetically simple comfort food and that is exactly why we love it.
Swap the cream of mushroom for cream of chicken if you have mushroom haters at home. Cover leftovers and reheat in a 350F oven so the tots crisp up again.
Before You Start Cooking
When ground beef goes on sale, I stock up and freeze it in one pound portions pressed flat in bags, which thaw in about 15 minutes in a bowl of cold water. Cooked beef dishes keep 3 to 4 days in the fridge.
I hope these dinners bring a few easy wins and happy faces to your table this week. Ground beef may be humble, but in the right recipe it becomes a meal your family will remember and ask for again.
Frequently Asked Questions
What temperature should ground beef be cooked to?
Ground beef should reach 160F to be safe, which you can check with an instant read thermometer. Unlike steak, ground meat has surface bacteria mixed throughout, so it needs to be cooked all the way through. Fully cooked crumbles will show no pink and the juices will run clear.
What is the best fat percentage of ground beef to buy?
For most skillet meals and casseroles, 85 or 90 percent lean is a good balance of flavor and less grease to drain. For burgers and meatballs, 80 percent lean keeps them juicy and tender. Leaner beef can dry out, so add a little moisture like milk soaked breadcrumbs when you use it.
How long does cooked ground beef last in the fridge?
Cooked ground beef keeps safely for 3 to 4 days in an airtight container in the refrigerator. Cool it within 2 hours of cooking. For longer storage, freeze it in flat bags for up to 3 months and thaw it overnight in the fridge before using it in tacos, soups or casseroles.
